The History of Recipes
Written cooking instructions as an idea can be found far back into history, in truth as far back into history as pharonic Egypt, and possibly even further. Having said that, in the main part, these ancient records were just basic pictorial instructions for preparing meals.
Progressing into Roman times around 25BC a roman called Apicius created a few scripts showing how to cook the recipes cooked by wealthy Romans. In his scrolls, he tells us how the roman meals were separated into hors d`oeuvres, main course and desserts, something we still use today. Aspicius also recounts how the chefs of Roman times were skilled in the use of many spices and herbs, including some familiar names for example basil, rue and parsley. Later on in the 1400s, people returning from the crusades brought us a variety of spices and herbs from the Middle-East, including coriander, basil and rosemary. These new foods and spices created a torrent in books on cookery, most of which are now in private libraries. By the advent of the twentieth century, cookbooks were greatly in demand mostly due to increased literacy, people having more spare time and having more money. |
