The History of Recipes

We are able to read the history of written recipes back into ancient history, certainly as far back into history as the Egyptians, and quite possibly further than that. In practice though, sadly, these old cookbooks were just primitive pictorial recipes for preparing meals.

The truth of the matter is, the oldest recipe discovered, according to academics is a collection of ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`.

As we move into The time of the romans around 25BC a man called Apicius created a number of scripts detailing recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals were divided into appetizers, entrees and afters, a very modern way of dining. This early Roman chef informs us how the cooks of his times used a wide range of aromatic flavours, including a few you will know for example basil, rue and dill.

Later, in the fifteenth century, knights returning from the crusades brought us a variety of foods, spices and herbs from the holy lands, including coriander, basil and rosemary. The introduction of these new tastes led to a surge in manuscripts on cooking, most of which are now in private collections.

During the next few centuries, the rich families of the West competed to serve up the best banquets, and consequentially the best cooks and their recipes were much in demand. Notwithstanding that, it was during the 1800s that cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and publishing recipes of the day.

By the advent of the 20th century, cooking publications were highly popular due to better eduction, more leisure time and having more disposable income.
