The History of Recipes
Historians have tracked the existance of recipes way back into ancient history, at least as far into history as pharonic Egypt, and maybe even further. Having said that, mostly, these old cook books were just primitive hieroglyphic recipes for preparing food.
Fascinatingly, the oldest recipe found, according to food historians are some ancient tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `blissful`. During the time of the Roman Empire a man called Apicius compiled some scripts detailing recipes cooked by his fellow Romans. He tells us how the roman meals were divided into hors d`oeuvre, main meal and dessert, something that is very familiar to us today. Additionally, he tells us how the early Romans were skilled in the use of a wide range of spices, including a few that will be familiar to modern cooks such as thyme, fennel and parsley. Over the following few hundred years, the rich families of Europe competed to offer the most extravagent meals, and as a result chefs and their recipes were at a premium. Notwithstanding that, it wasn`t until the 19th century that fine cookery and recipe publications became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, testing, and publishing popular recipes of the day. The introduction of television brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to access massive numbers of recipes just like those on this web site. |
