The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into antiquity, in truth as far back as pharonic Egypt, and potentially, even further back. In practice though, mostly, these old recipes were just very basic pictorial instructions for preparing food.
The truth of the matter is, the oldest recipe discovered so far, according to experts is a collection of ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. As we move into Roman times around 25BC a roman called Apicius compiled a few documents describing recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into starters, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient chefs used many spices, including some that we all recognise like basil, rue and asafoetida. Moving on, there were some recipe books which appeared in the fourteenth century - a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, they are nothing to do with the indian curry that is served today, but rather accounts of the types of meals eaten by the rich and powerful of the time. Later, in the 15th century, people returning from the crusades brought us many foods and herbs from Arab cuisine, including spices like coriander, parsley, and rosemary. These new foods and spices was responsible for a surge in books on cookery, some of which still exist in private cookery archives. The revolution that is television brings us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through thousands of recipes like the ones you can find on this web site. |
