The History of Recipes
Written cooking instructions as an idea can be found way back into ancient history, in truth as far into history as the ancient Egyptians, and possibly even further than that. However, generally, these early cook books were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move into The time of the roman empire around 25BC a man called Apicius compiled some scripts which described recipes cooked by wealthy roman citizens. In his publication, Apicius tells us how the meals were divided into starters, entrees and afters, something we still use today. Aspicius also describes how the cooks of his times were skilled in the use of many different spices, including a few that are still present in modern kitchens like bay, fennel and dill. In the 15th century, knights returning from the crusades brought us many new spices and herbs from Arab cuisine, such as rosemary and coriander. These new foods and spices was responsible for a surge in manuscripts on food, many of which still exist in private collections. When we get to the 1900s, recipe books were starting to become popular mostly due to higher levels of literacy, people having more free time and having more disposable income. |
