The History of Recipes
Historians have tracked the existance of recipes far back into history, in fact as far as the early Egyptians, and maybe even further. Interesting though that is, in the main part, these early cook books were just simple pictorial instructions for preparing food.
Fascinatingly, the most ancient recipe in existence, according to Professor Solomon Katz, is a collection of clay tablets in ancient Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. During the time of the Roman Empire a roman called Apicius wrote a number of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into hors d`oeuvre, main course and afters, a very modern way of dining. He also recounts how the chefs of Roman times made use of a good variety of spices, including some familiar names like bay, mint and parsley. In the fifteenth century, people returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices such as rosemary and coriander. These new foods and tastes prompted an increase in manuscripts on cookery, the majority of which are now in private collections. Over the following few hundred years, the powerful and rich houses strove to lay on the best banquets, and as a consequence, chefs and their recipe collections were highly sought after. However, it wasn`t until the nineteenth century that cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, testing, and writing down recipes to allow everyone to enjoy them. The introduction of television gave us celebrity TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everybody to search through thousands of recipes such as those found on this web site. |
