Ingredients
3 cup chokecherry juice
1 package commercial pectin
1 cup white corn syrup
3 cup sugar
Directions
Dissolve the pectin in choke cherry juice. Add corn syrup and bring
to a boil. Add sugar and boil 2 minutes. Put into hot sterilized
jars, seal and process 8 minutes in water bath.

The History of Recipes
We can trace the history of meal recipes way back into the far past, at least as far back as the Egypt of the Pharoahs, and maybe even further. However, these, ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
In fact, the oldest recipe discovered, according to experts in ancient history are some tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius assembled a collection of documents detailing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also informs us how the Roman chefs were skilled in the use of many herbs and spices, including a few you will know such as thyme, rue and dill. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from the holy land, including spices such as coriander, parsley, and basil. The introduction of these new foods and spices created an explosion in recipe books, many of which still exist in academic collections. The introduction of the TV brings us TV cooks and the demand for the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing us all to access thousands of recipes like the ones you can find on our site. |
