The History of Recipes
It is quite possible to track the history of recipes way back into antiquity, at least as far back as ancient Egypt, and possibly even further. In practice though, generally, these old cook books were just very simple hieroglyphic instructions for preparing food.
During Roman times 25BC a roman called Apicius compiled a few scripts detailing recipes cooked by wealthy roman citizens. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvres, entrees and desserts, something we still use today. Additionally, he informs us how the Roman chefs used a good variety of spices and herbs, including a few that will be familiar to modern cooks like thyme, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought us many spices and herbs from Arab cuisine, including spices such as coriander, parsley, basil and rosemary. These new culinary innovations caused a surge in books on cookery, most of which are kept safe in private libraries. By the time we get to the twentieth century, cookery books were in great demand, mostly due to higher levels of literacy, more spare time and having more money. |
