The History of Recipes

Written recipes as an idea can be found far back into antiquity, at least as far into history as the Egyptians, and possibly even further. Interesting though that is, generally, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.

In an interesting twist, the oldest recipe in existence, according to Professor Solomon Katz, are a few ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful.

During the time of the Romans a roman called Apicius wrote a number of scripts detailing recipes cooked by his fellow Romans. In his works, he recounts how the roman meals were split into hors d`oeuvre, entrees and desserts, a very modern way of dining. Aspicius also describes how the cooks of Roman times used a wide range of spices and herbs, including some that we all recognise for example bay, fennel and parsley.

Moving our culinary historical trip onwards, we find some recipe books from the 1300s - one book published under the title `Forme of Cury`, and another, similary called `Curye on Inglish`. Despite their titles, these have no connection with the indian curry that we all know today, but rather descriptions of the types of meals enjoyed by the rich and wealthy people of the time.

Later on, in the 15th century, people returning from the crusades brought back many foods, spices and herbs from Arab cooking, including spices such as coriander, parsley, and basil. The introduction of these new culinary ideas caused an outbreak in books on cookery, most of which still exist in academic collections.

Over the next few hundred years, the powerful and rich houses competed to offer the best banquets, and as a consequence, chefs and their recipes were greatly in demand. However, it wasn`t until the 1800s that fine cooking and recipe books became really popular. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to assembling, testing, and writing down the recipes of their peers.

When we get to the 20th century, cook books are in great demand, due to more people being able to read, more spare time and being a little richer.

The arrival of TV gave us TV cookery programs and the spin-off recipe books.

Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes just like those on this recipe site.
