The History of Recipes
It is possible to track the history of meal recipes way back into the far past, certainly as far back into history as pharonic Egypt, and maybe further still. However, in the main part, these old cookbooks were just very simple hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe found, according to experts is a series of ancient tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel wonderful and blissful. Later on, in The time of the romans around 25BC a roman called Apicius assembled a collection of documents detailing recipes enjoyed by wealthy roman citizens. In his publication, he tells us how the meals were split into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef describes how the cooks of his times were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern cooks such as bay, mint and parsley. For the decades that followed, the upper-class families of Europe competed to serve the most extravagent meals, and as a result the best cooks and their recipe collections became highly prized. Nevertheless, it was during the 1800s that haute cuisine and recipe publications became really popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, testing, and publishing popular recipes of the day. By the time we get to the 20th century, cooking books are highly popular as a result of increased literacy, people having more leisure time and disposable income. |
