The History of Recipes
It is possible to read the history of written recipes way back into ancient history, in fact as far back into recorded history as early Egypt, and maybe further still. Interesting though that is, in the main part, these early cook books were just simple hieroglyphic or cunieform recipes for food preparation.
Fascinatingly, the oldest recipe found, according to experts is a collection of ancient tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful. During the time of the Roman Empire a man called Apicius assembled a number of scripts describing recipes prepared by wealthy roman citizens. In his publication, he describes how the meals were separated into starters, main meal and desserts, something that is very familiar to us today. Additionally, he informs us how the Roman chefs used a wide range of spices and herbs, including a few that will be familiar to modern cooks for example thyme, mint and dill. Over the following few hundred years, the powerful families of Wesstern Europe competed with each other to offer the most exotic banquets, and as a result the best cooks and their recipe collections became highly prized. Even so, it was during the 19th century that cookery and recipe publications really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, testing, and publishing the recipes of their peers. By the arrival of the 20th century, recipe publications were in great demand, due to increased literacy, people having more spare time and disposable income. |
