The History of Recipes
It is quite possible to track the history of written cooking instructions way back into the far past, certainly as far as the ancient Egyptians, and potentially, even further back. Having said that, these, early recipes were just very basic hieroglyphic or cunieform recipes for meal preparation.
Interestingly, the oldest recipe found, according to experts in ancient history is a series of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Progressing into The time of the romans around 25BC a man called Apicius created some scripts detailing recipes prepared by wealthy Romans. He tells us how the roman meals were divided into hors d`oeuvre, entrees and afters, a very modern way of dining. He also describes how the ancient Romans used a wide range of spices, including many that are still in use today such as bay, mint and asafoetida. During the next few hundred years, the upper-class families of Europe competed to lay on the most exotic banquets, and as a result the best chefs and their recipes increased in prestige. Notwithstanding that, it wasn`t until the 1800s that formal cookery and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy. By the time we get to the twentieth century, cooking books are highly popular mostly due to increased literacy, people having increased spare time and a general increase in wealth. |
