Ingredients
1 lb linguine or spaghetti, or thin spaghetti, uncook
1/4 cup olive or vegetable oil
1 cup chopped onion
1 cup chopped carrot
1 cup chopped celery
2 tbsp finely chopped parsley
1 1/2 tsp salt
1/2 tsp sugar
1/4 tsp pepper
32 oz canned peeled tomatoes
Directions
In a large skillet, heat oil; add onion, carrot and celery. Cook and
stir just until vegetables are tender. Add next five ingredients,
simmer on low heat 20 minutes, stirring frequently.
Cook pasta according to package directions; drain. Toss pasta with
sauce and serve.

The History of Recipes
We are able to trace the history of written recipes back into ancient history, at least as far into history as the Egyptians, and possibly even further. Having said that, mostly, these old recipes were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
As we move into Roman times 25BC a man called Apicius created some documents detailing recipes cooked by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, entrees and desserts, a style of dining still practiced today. This early Roman chef tells us how the cooks of his times used a good variety of herbs and spices, including a few that will be familiar to modern cooks such as thyme, rue and parsley. During the next few centuries, the rich families of the West competed to offer the best banquets, and as a consequence, cooks and their collection of recipes could command a high salary. Notwithstanding that, it was during the 1800s that fine cooking and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, verifying, and publishing popular recipes of the day. By the advent of the 20th century, cooking publications were in great demand, due to more people being able to read, more free time and having more money to spend. |
