The History of Recipes
We are able to track the history of written recipes back into antiquity, in fact as far as the Egyptians, and quite possibly further than that. In practice though, mostly, these early recipes were just very basic hieroglyphic instructions for food preparation.
In an interesting twist, the oldest recipe in existence, according to experts in ancient history are some tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Continuing our culinary historical journey, we find two interesting books dating from the fourteenth century - a book titled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the curry that is popular today, but rather accounts of the types of meals on the tables of the wealthy. Over the succeeding few hundred years, the powerful and wealthy houses competed with each other to serve the most exotic banquets, and as a consequence, the best chefs and their recipes increased in prestige. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collecting, verifying, and recording recipes that were common in the better off homes of the day. When we get to the twentieth century, cook books are in high demand, mostly due to more people being able to read, people having increased free time and a general increase in wealth. The TV revolution gave us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to access massive numbers of recipes such as those found on the site you are now reading. |
We hope you enjoy this Cilantro Rice recipe.
