The History of Recipes
Academics have found proof that recipes existed far back into ancient history, in truth as far back into recorded history as the ancient Egyptians, and maybe further still. Interesting though that is, sadly, these old cookbooks were just primitive hieroglyphic recipes for meal preparation.
Interestingly, the most ancient recipe found, according to Professor Solomon Katz, are some clay tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful and blissful. Later on, in Roman times 25BC a roman called Apicius created a collection of documents which described recipes enjoyed by wealthy Romans. In his works, Apicius describes how the meals of wealthy Romans were separated into appetizers, entrees and desserts, a style of dining still practiced today. Aspicius also recounts how the Romans used a wide range of aromatic flavours, including a few that will be familiar to modern cooks for example thyme, rue and parsley. In the fifteenth century, people returning from the crusades brought us many new spices and herbs from the Middle-East, including coriander, parsley, and rosemary. These new foods and tastes led to a surge in books on cookery, many of which are now in private collections. During the succeeding few hundred years, the rich and powerful families of the West tried to serve the most exotic meals, and as a result the best cooks and their recipes were highly sought after. However, it was during the 1800s that fine cooking and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, trying out, and publishing recipes common in their social group. Like it or not, the introduction of television gave us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everybody to access thousands of recipes just like those on our site. |
