The History of Recipes
We are able to track the history of written recipes far back into ancient history, at least as far back into history as ancient Egypt, and maybe further still. Having said that, mostly, these old records were just very basic pictorial, hieroglyphic or cunieform instructions for preparing meals.
As we move into The time of the romans around 25BC a roman called Apicius compiled some scripts describing recipes prepared by wealthy Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were separated into appetizers, main meal and afters, a very modern way of dining. This early Roman chef informs us how the ancient chefs made use of many herbs and spices, including a few that are still present in modern kitchens such as bay, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us many spices and herbs from the holy lands, including parsley, basil and rosemary. The introduction of these new foods and spices led to an explosion in manuscripts on cooking, most of which are kept safe in private cookery archives. By the advent of the 20th century, cookery books were in great demand, mostly due to better eduction, people having more spare time and disposable income. |
