The History of Recipes
Written cooking instructions as an idea can be found way back into the distant past, at least as far into history as the early Egyptians, and possibly even further than that. Having said that, sadly, these old records were just primitive hieroglyphic recipes for preparing meals.
In fact, the oldest recipe discovered, according to food historians is a series of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Later on, in Roman times around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes prepared by the Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, main meal and desserts, a style of dining still practiced today. Additionally, he recounts how the Romans were skilled in the use of many herbs and spices, including many that are still in use today like bay, mint and dill. Later on, there are a couple of interesting books published in the 14th Century : a cookery book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Surprisingly, these are unconnected to the indian curry that is popular today, but instead recipes for the types of meals prepared by the chefs of the rich and powerful. Later on in the 1400s, knights returning from the crusades brought us many foods and spices from the holy lands, such as parsley, basil and rosemary. These new foods and spices prompted an eruption in books on cookery, many of which are now in private libraries. For the next few years, the wealthy families of Europe competed with each other to offer the most extravagent banquests, and consequentially cooks and their collection of recipes could command a high salary. Nevertheless, it wasn`t until the 19th century that cookery and recipe collections became popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to collating, verifying, and recording recipes to help cooks of their time. By the advent of the twentieth century, recipe publications are in great demand, as a result of better eduction, people having more free time and having more money to spend. |
