The History of Recipes
Experts have traced the existance of recipes way back into the far past, in truth as far as the Egyptians, and quite possibly further than that. However, these, early records were just very simple pictorial, hieroglyphic or cunieform recipes for preparing food.
Interestingly, the most ancient recipe in existence, according to experts in ancient history is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated and blissful. During Roman times 25BC a man called Apicius created some scripts which described recipes prepared by the Romans. In his works, Apicius tells us how the meals were separated into appetizers, main course and dessert, something that is very familiar to us today. Additionally, he informs us how the Roman cooks used a good variety of aromatic flavors, including a few you will know such as bay, fennel and asafoetida. Closer to modern times, we have two interesting cookery books from the fourteenth century : a book called `Forme of Cury`, and another titled `Curye on Inglish`. Perhaps surprisingly, these two books are not about the curry that appears on menues today, but rather recipes for the types of food on the menus of the upper classes. In the fifteenth century, knights returning from the crusades brought back many new foods, spices and herbs from Arab countries, including spices like basil and rosemary. The introduction of these new foods and spices created an increase in publications on food, some of which still exist in private libraries. Like it or not, the introduction of television brings us celebrity chefs and the spin-off recipe books. Which pretty much brings us up to date and the invention of the internet, permitting us all to access thousands of recipes such as those found on sites such as this. |
