The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into ancient history, certainly as far as the Egypt of the Pharoahs, and quite possibly further than that. In practice though, sadly, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for preparing meals.
In fact, the most ancient recipe discovered, according to historians is a series of clay tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful and exhilarated. Later on, in The time of the romans around 25BC a roman called Apicius created a number of documents which described recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals were split into appetizers, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also describes how the ancient chefs used many aromatic flavors, including a few that are still present in modern kitchens like bay, mint and asafoetida. For the decades that followed, the families of Europe tried to serve the most exotic meals, and consequentially chefs and their recipes were greatly in demand. Nevertheless, it was during the nineteenth century that cooking and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted their lives to collating, trying out, and recording recipes to allow everyone to enjoy them. By the time we get to the 20th century, cookbooks were increasing in popularity mostly due to better eduction, leisure time and having more money. The arrival of television gave us celebrity chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on sites such as the one you are reading now. |
