Citrus Vinaigrette Dressing Recipe


Ingredients

1 juice of 1 orange
1 (preferably a large spanish
1 navel orange)
2 tbsp lemon juice
2 tbsp balsamic or white wine
1 vinegar
1 clove garlic, crushed
1 pinch salt
1/4 tsp dry mustard powder
1 freshly-ground black pepper
1 tsp brown sugar.


Directions

Put everything in a screw-top jar and shake thoroughly. Will keep for
a couple of days in the refrigerator.

In the fifteenth century, people returning from the crusades brought back many new foods and herbs from Arab cuisine, including spices like coriander, parsley, basil and rosemary. These new herbs and spices created an explosion in recipe books, most of which still exist in private cookery archives.

During the succeeding few hundred years, the families of Europe strove to lay on the most extravagent meals, and because of this the best chefs and their collection of recipes could command a high salary. Nevertheless, it was during the 19th century that cookery and recipe books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to assembling, testing, and writing down recipes of the day.

Like it or not, the introduction of television gave us celebrity TV chefs and the demand for the accompanying recipe books.
