4 bacon strips, fried, drained on paper t
2 tbsp mustard, dijon
1/2 tsp salt, diamond kosher
1 tsp black pepper, freshly ground
2 tsp fennel seed, freshly ground
1/4 cup honey, from friendly bees
1/3 cup vinegar, apple cider
1/3 cup orange juice, fresh squeezed
1/3 cup olive oil, evoo option, use walnut o
Directions
In a large skillet, fry the bacon until crisp, drain, remove and set
aside.
To the hot drippings, add the mustard, salt and pepper, fennel seed,
honey, and cider vinegar. Bring to a boil and simmer for 30 seconds.
Remove from the heat and whisk in the orange juice and the olive oil.
Use the reserved bacon to top the salad, or toss the salad with the
crumbled bacon and serve.

The History of Recipes
We can trace the history of meal recipes back into antiquity, in truth as far back into history as the ancient Egyptians, and quite possibly further than that. Interesting though that is, mostly, these ancient recipes were just simple hieroglyphic recipes for meal preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled a collection of documents which described recipes enjoyed by the Romans. In his works, he recounts how the meals were separated into hors d`oeuvres, entrees and afters, a style of dining still practiced today. Aspicius also informs us how the ancient Romans were skilled in the use of a wide range of spices and herbs, including a few that will be familiar to modern chefs like thyme, rue and asafoetida. Later on in the 1400s, the Crusaders brought back many new spices and herbs from the Middle-East, including spices like coriander, parsley, and basil. These new foods and tastes created a surge in manuscripts on cooking, many of which are now in private collections. For the next few years, the powerful families of Europe tried to serve up the most exotic banquets, and as a result the best chefs and their recipes were highly sought after. However, it wasn`t until the 1800s that cooking and recipe collections became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and publishing recipes that were common in the better off homes of the day. The introduction of the TV brought us celebrity chefs and the accompanying recipe books. Which brings us neatly to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this site. |
