The History of Recipes
Academics have tracked the existence of recipes back into antiquity, in fact as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Having said that, these, early records were just basic pictorial instructions for preparing food.
Fascinatingly, the most ancient recipe discovered, according to experts in ancient history are a few stone tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `wonderful`. Progressing into The time of the romans 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by his fellow Romans. He tells us how the roman meals were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the ancient Romans were skilled in the use of a wide range of aromatic flavours, including some that we all recognise for example basil, mint and dill. Over the next few centuries, the wealthy families of the West strove to serve the most extravagent banquests, and consequentially cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to assembling, trying out, and recording recipes common in their social group. By the arrival of the twentieth century, cooking books were starting to become popular as a result of better eduction, people having more free time and a general increase in wealth. |
