Ingredients
30 can minced clams (6-1/2 oz each)
8 cup diced onions
1 1/2 lb butter or margarine
2 cup all-purpose flour
3 qt milk
3 bunch celery, sliced
3 cup minced fresh parsley
12 lb potatoes, peeled and cubed
3 lb sharp cheddar cheese, shredded
1 salt & pepper to taste
Directions
Drain and rinse clams, reserving juice; set aside. In a large kettle,
saute onions in butter until tender. Add flour; stir to form a smooth
paste. Gradually add the milk, stirring constantly until slightly
thickened (do not boil). Add celery, parsley and potatoes and cook
until tender, about 45 minutes. Add the clams and cheese; cook until
cheese is melted and soup is heated through. Add reserved clam juice
and salt and pepper.

The History of Recipes

In the fifteenth century, the Crusaders brought back many new spices and herbs from the holy land, including parsley, basil and rosemary. These new foods and tastes caused an explosion in recipe books, some of which still exist in private cookery archives. The introduction of television brought us celebrity TV chefs and the accompanying recipe books. Which brings us neatly to the present day and the internet revolution, allowing everybody to access massive numbers of recipes such as those found on sites such as this. |
