Ingredients
36 clams
2/3 tbsp dry white wine
1 stuffing:
3 1/2 cup fresh bread crumbs
1 tbsp fresh basil
1 tbsp oregano
2 tbsp grated romano cheese
2 tbsp minced fresh italian
1 parsley
1 juice of
1/2 lemon (approx. 2 tab)
1 tbsp minced garlic
Directions
Preheat oven to 500 F Shuck clams and replace meat on half-shells.
Pack about 1 heaping tbs.stuffing on each. Bake in preheated oven for
about 10minutes. Remove from oven and sprinkle each clam with a few
drops of wine. Return to oven and bake 2 to 3 minutes more, or until
lightly browned. Stuffing: Combine all ingredients by mixing with
hands. Use more olive oil if the mixture seems too dry. 12/23 10:38

The History of Recipes
We are able to read the history of meal recipes far back into distant history, in fact as far back into history as the ancient Egyptians, and possibly even further than that. As we move into The time of the romans around 25BC a roman called Apicius wrote a few documents showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvres, entrees and desserts, a very modern way of dining. This early Roman chef informs us how the Roman cooks were skilled in the use of a wide range of spices, including a few that will be familiar to modern chefs such as basil, rue and parsley. Later, in the fifteenth century, people returning from the crusades brought back a variety of spices and herbs from middle-east cuisine, such as basil and coriander. The introduction of these new tastes caused an outbreak in recipe books, most of which still exist in private libraries. The revolution that is television gave us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this web site. |
