The History of Recipes

Experts have traced the existence of recipes far back into history, at least as far back into recorded history as the ancient Egyptians, and maybe even further. However, generally, these early records were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.

Fascinatingly, the oldest recipe in existence, according to experts are some clay tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `blissful`.

During the time of the Roman Empire a roman called Apicius wrote a number of documents describing recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, something we still use today. This early Roman chef informs us how the ancient Romans were skilled in the use of many herbs and spices, including a few that are still present in modern kitchens for example bay, fennel and asafoetida.

Over the following few hundred years, the powerful and rich houses competed with each other to offer the most exotic banquets, and as a consequence, chefs and their recipe collections became highly prized. Nevertheless, it wasn`t until the 19th century that formal cookery and recipe books became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, spent years to collating, verifying, and recording recipes common in their social group.

By the arrival of the 20th century, cook books were in great demand, mostly due to more people being able to read, increased leisure time and disposable income.
