Classic Citrus Salad Recipe

Ingredients

DRESSING

1 tbsp natural rice vinegar
1/4 tsp dijon-style mustard
1 dash each salt and pepper
1/2 tsp olive oil

SALAD

2 cup fresh spinach leaves, washed
1 dried and chilled
1 small orange, peeled and segmented
2 tbsp finely sliced red onion
3 walnut halves, coarsely
1 chopped

Directions

1. To make dressing: In small bowl whisk together dressing
ingredients.

2. To make salad: Arrange salad ingredients in serving bowl.

3. Pour dressing over salad and toss.

DEAL-A-MEAL HELPFUL HINT: To segment an orange, use a serrated
knife and peel around the orange, removing skin and all white parts.
Insert knife on either side of membranes to remove orange segments.

In a pinch, you could use mandarin oranges canned in their own juice
for this recipe, but a fresh, sweet, juicy orange is much better.

The History of Recipes

It is possible to track the history of meal recipes back into distant history, in fact as far back as ancient Egypt, and possibly even further. Interesting though that maybe, mostly, these early cookbooks were just very basic hieroglyphic recipes for preparing food.

In fact, the most ancient recipe discovered, according to historians is a collection of stone tablets in ancient Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful.

Later on, in The time of the romans around 25BC a man called Apicius compiled a number of scripts showing how to cook the recipes cooked by the Romans. In his scrolls, he tells us how the meals were split into hors d`oeuvre, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius recounts how the chefs of Roman times used many herbs and spices, including a few that are still present in modern kitchens like thyme, fennel and parsley.

For the decades that followed, the wealthy families of Wesstern Europe strove to offer the most exotic meals, and consequentially cooks and their recipe collections were much in demand. Even so, it wasn`t until the 19th century that cooking and recipe publications became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, verifying, and recording recipes to help cooks of their time.

The arrival of television brought us TV chefs and the recipe books that accompanied them.

And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on our site.
