Ingredients
1/2 cup sugar
14 oz can sweetened condensed milk
1 cup milk
3 each large eggs plus
3 each yolks of large eggs
1/2 tsp almond extract
1 tsp vanilla extract
Directions
In a small saucepan melt sugar over moderate heat, stirring
frequently, until sugar is a dark, caramel-colored liquid. Remove
from heay and pur into a 4 cup metal ring mold or 8 individual molds.
Quickly turn mold to coat bottom and sides with the caramel. Let cool
so caramel hardens. Heat oven to 325. Put the condensed milk, milk,
eggs, egg yolks and flavorings into an electric blender. Cover and
blend to mix well. Pour mixture into mold; put mold in a larger pan
filled with water to depth of 1/2 inch. Bake for 1 hour. Remove from
oven and remove mold from water. Cool and then refrigerate up to 2
days. Cover mold with an inverted serving platter. Hold mold and
platter together and turn them over. Lift off mold. Caramel will fall
as a liquid sauce over the custard.

The History of Recipes
It is possible to read the history of meal recipes way back into the distant past, at least as far back into history as the early Egyptians, and quite possibly further than that. Later, there are some recipe books dating from the fourteenth century - one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Surprisingly, they are not about the indian curry that is popular today, but rather recipes for the types of meals on the tables of the rich and powerful of the time. For the decades that followed, the powerful families of the West competed with each other to offer the best banquets, and as a result the best chefs and their recipes were greatly in demand. Nevertheless, it was during the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to assembling, verifying, and publishing recipes for their fellow cooks to enjoy. By the time we get to the 1900s, recipe books are in great demand, due to increased literacy, people having increased spare time and having more money. |
