The History of Recipes
Experts have tracked the existance of recipes way back into the distant past, in fact as far back into recorded history as pharonic Egypt, and quite possibly further than that. Having said that, generally, these old records were just very basic hieroglyphic or cunieform instructions for food preparation.
Later on, in Roman times 25BC a man called Apicius assembled a few documents showing how to cook the recipes enjoyed by wealthy Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, main course and afters, a very modern way of dining. This early Roman chef tells us how the Roman cooks made use of a good variety of herbs, including a few you will know such as thyme, mint and parsley. During the succeeding few hundred years, the powerful families of the West strove to serve the most extravagent meals, and as a result the best chefs and their recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated years of their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 1900s, recipe books are greatly in demand as a result of increased literacy, people having increased free time and being a little richer. |
