The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into antiquity, in truth as far as early Egypt, and maybe even further. Having said that, in the main part, these old records were just very simple pictorial instructions for preparing meals.
As we move into The time of the romans 25BC a man called Apicius compiled a collection of scripts which described recipes prepared by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the Romans used a good variety of spices, including a few you will know such as thyme, mint and dill. Later, in the 15th century, the Crusaders brought back many new foods and herbs from Arab cooking, including spices such as parsley and basil. The introduction of these new foods and spices created a torrent in publications on food, the majority of which still exist in private collections. By the time we get to the twentieth century, cooking books were increasing in popularity mostly as a result of more people being able to read, leisure time and disposable income. |
