The History of Recipes
Transcribed cooking instructions as a concept can be traced way back into ancient history, certainly as far back into history as the Egyptians, and possibly even further than that. In practice though, generally, these ancient records were just primitive hieroglyphic or cunieform recipes for meal preparation.
During the time of the Romans a man called Apicius compiled some scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals were separated into appetizers, main meal and afters, a very modern way of dining. This early Roman chef describes how the ancient cooks were skilled in the use of a good variety of spices, including many that are still in use today such as basil, rue and asafoetida. Over the next few hundred years, the rich families of Europe competed to serve the best banquets, and consequentially cooks and their recipe collections increased in prestige. Notwithstanding that, it was during the 19th century that formal cookery and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collecting, testing, and recording recipes for their fellow cooks to enjoy. The arrival of TV brought us TV cooks and the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on this recipe site. |
