The History of Recipes
Food historians have tracked the existence of recipes back into distant history, in truth as far back into history as the early Egyptians, and quite possibly further than that. Having said that, sadly, these early cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for food preparation.
As we move into The time of the roman empire 25BC a Roman scholar, called Apicius, assembled some scrolls which described recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals of wealthy Romans were divided into appetizers, entrees and afters, a style of dining still practiced today. Aspicius also recounts how the Roman cooks used many different aromatic flavors, including many that are still in use today such as thyme, fennel and asafoetida. Over the next few centuries, the wealthy families of Europe tried to serve the best banquets, and as a consequence, the best cooks and their collection of recipes increased in prestige. Nevertheless, it was during the 1800s that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to collating, trying out, and recording recipes for their fellow cooks to enjoy. The introduction of television brought us celebrity chefs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, permitting us all to search through thousands of recipes like those on sites such as this. |
