The History of Recipes
Academics have tracked the existence of recipes back into distant history, in truth as far back into history as pharonic Egypt, and possibly even further. However, generally, these ancient records were just basic pictorial recipes for preparing meals.
In fact, the oldest recipe found, according to historians is a collection of ancient tablets in Sumerian describing the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. Progressing into Roman times around 25BC a roman called Apicius wrote a collection of documents describing recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, entrees and desserts, something that is very familiar to us today. He also tells us how the ancient chefs used many herbs, including a few that will be familiar to modern chefs like thyme, rue and parsley. For the next few years, the powerful and wealthy competed with each other to serve the most exotic meals, and as a result the best chefs and their recipe collections were greatly in demand. Even so, it was during the 1800s that fine cooking and recipe publications really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated their lives to collecting, verifying, and publishing recipes to allow everyone to enjoy them. By the advent of the twentieth century, cookbooks are in high demand, mostly due to increased literacy, people having increased leisure time and having more money. |
