Ingredients
1 tbsp butter or margarine
1/4 lb fresh mushrooms, thinly sliced
3 cup cubed cooked chicken
2 cup soft bread crumbs
1 cup milk
1 cup condensed chicken broth
1/4 cup finely chopped pimiento
2 eggs, slightly beaten
2 tbsp instant minced onion
3/4 tsp salt
1/2 tsp pepper
1/8 tsp dried thyme leaves
1 cup chicken mushroom gravy (recipe)
Directions
1. In a deep, 2-quart, heat-resistant, non-metallic casserole melt
butter in Microwave Oven 30 seconds. 2. Add mushrooms and heat,
uncovered, in Microwave Oven 1 1/2 minutes or until mushrooms are
tender. 3. Add remainder of ingredients to mushrooms and stir to
blend well. 4. Heat, uncovered, in Microwave Oven 10 to 12 minutes
stirring occasionally. 5. Serve topped with Chicken Mushroom Gravy.

The History of Recipes
We can read the history of `recipes` back into ancient history, at least as far back as the ancient Egyptians, and potentially, even further back. Interesting though that is, sadly, these old cook books were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Later on, in Roman times around 25BC a man called Apicius created some documents detailing recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals of wealthy Romans were separated into starters, main meal and afters, a style of dining still practiced today. This early Roman chef informs us how the ancient Romans were skilled in the use of many different spices, including a few that will be familiar to modern cooks for example bay, fennel and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many spices and herbs from the Middle-East, including spices like parsley, basil and rosemary. These new foods and tastes was responsible for an explosion in manuscripts on cooking, many of which are kept safe in private collections. By the arrival of the 20th century, cookery books were greatly in demand due to increased literacy, people having increased free time and a general increase in wealth. |
