Ingredients
1 tbsp butter or margarine
1/4 lb fresh mushrooms, thinly sliced
3 cup cubed cooked chicken
2 cup soft bread crumbs
1 cup milk
1 cup condensed chicken broth
1/4 cup finely chopped pimiento
2 eggs, slightly beaten
2 tbsp instant minced onion
3/4 tsp salt
1/2 tsp pepper
1/8 tsp dried thyme leaves
1 cup chicken mushroom gravy (recipe)
Directions
1. In a deep, 2-quart, heat-resistant, non-metallic casserole melt
butter in Microwave Oven 30 seconds. 2. Add mushrooms and heat,
uncovered, in Microwave Oven 1 1/2 minutes or until mushrooms are
tender. 3. Add remainder of ingredients to mushrooms and stir to
blend well. 4. Heat, uncovered, in Microwave Oven 10 to 12 minutes
stirring occasionally. 5. Serve topped with Chicken Mushroom Gravy.

The History of Recipes
Recipes as a concept can be found back into distant history, in fact as far into history as the ancient Egyptians, and maybe even further. Interesting though that is, sadly, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe discovered so far, according to experts is a series of clay tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times 25BC a man called Apicius compiled some documents showing how to cook the recipes enjoyed by his fellow Romans. He recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, a very modern way of dining. This early Roman chef informs us how the Romans made use of many herbs and spices, including a few you will know like thyme, rue and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us a variety of spices and herbs from Arab cuisine, including spices such as basil and rosemary. These new foods and tastes created an increase in recipe books, most of which still exist in private libraries. Over the succeeding few centuries, the wealthy families of Europe strove to serve up the most exotic banquets, and because of this chefs and their collection of recipes became highly prized. However, it was during the nineteenth century that cookery and recipe books really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, verifying, and publishing recipes that were common in the better off homes of the day. When we get to the twentieth century, recipe books were greatly in demand mostly due to higher levels of literacy, increased leisure time and disposable income. The TV revolution brought us TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on our web site. |
