The History of Recipes
Written recipes as a concept can be found way back into antiquity, at least as far into history as ancient Egypt, and quite possibly further than that. Interesting though that maybe, generally, these early records were just very simple hieroglyphic instructions for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. During the time of the Romans a roman called Apicius compiled a number of documents detailing recipes cooked by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, main course and dessert, something that is very familiar to us today. He also recounts how the ancient cooks were skilled in the use of a wide range of spices, including a few you will know such as thyme, mint and asafoetida. Later on, in the 15th century, people returning from the crusades brought us many spices and herbs from Arab cuisine, including basil and coriander. The introduction of these new culinary ideas created an increase in recipe manuscripts, some of which are now in private libraries. Over the next few hundred years, the rich and powerful families of Wesstern Europe competed to offer the most exotic meals, and because of this the best cooks and their recipe collections became highly prized. However, it wasn`t until the nineteenth century that fine cookery and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to assembling, testing, and publishing recipes for their fellow cooks to enjoy. When we get to the 20th century, cookery books were in great demand, mostly due to higher levels of literacy, people having increased free time and disposable income. |
