The History of Recipes
Recipes as an idea can be tracked way back into ancient history, in truth as far back into recorded history as the ancient Egyptians, and possibly even further. Interesting though that maybe, sadly, these early recipes were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Fascinatingly, the oldest recipe found, according to experts in ancient history are some tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated. As our culinary historical trip moves to more modern times there were a couple of interesting books which date from the fourteenth century ; a book titled `Forme of Cury`, and another, similary titled `Curye on Inglish`. Amusingly, these two books are nothing to do with the spicy food that we all know today, but rather recipes for the types of meals prepared by the chefs of the upper classes of that period. In the 15th century, people returning from the crusades brought us many spices and herbs from the East, including rosemary and coriander. These new spices and herbs created a surge in cookery books, most of which are now in private collections. Over the next few centuries, the rich and powerful families of Europe competed with each other to serve up the most exotic meals, and as a result the best cooks and their recipe collections could command a high salary. Even so, it was during the 1800s the formal cooking and recipe books rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and publishing popular recipes of the day. The introduction of television brings us TV cookery programs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes just like those on this recipe site. |
