The History of Recipes
Historians have traced the existence of recipes back into distant history, certainly as far back as ancient Egypt, and potentially, even further back. Having said that, these, early cookbooks were just simple hieroglyphic or cunieform recipes for preparing food.
Fascinatingly, the oldest recipe in existence, according to academics is a series of ancient tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel exhilarated. Progressing into The time of the romans 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by his fellow Romans. In his publication, Apicius tells us how the meals were divided into hors d`oeuvre, main course and dessert, something we still use today. He also tells us how the chefs of Roman times used a wide range of spices, including a few you will know like basil, fennel and parsley. As our culinary historical trip moves to more modern times we have a couple of interesting recipe books from the 14th Century : a cookery book called `Forme of Cury`, and another, similary called `Curye on Inglish`. Surprisingly, these are not about the indian food that is familiar to us all today, but rather recipes for the types of meals prepared by the cooks of the upper classes of the time. In the 15th century, knights returning from the crusades brought back many foods, spices and herbs from Arab cooking, such as basil and rosemary. These new foods and spices prompted a torrent in recipe manuscripts, many of which still exist in private collections. By the arrival of the twentieth century, cooking books are in high demand, due to more people being able to read, people having more free time and having more disposable income. The introduction of television brings us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through thousands of recipes just like those on this web site. |
