Ingredients
1 bettie cooper(dallas)
3 lb cut-up chicken
1/3 cup flour
2 tsp salt
1/3 cup oil
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced green pepper
1 cup ketchup
1 cup coca cola
2 tbsp worchestershire sace
1/2 tsp hickory smoked salt(opt)
1/2 tsp basil leavews
1/2 tsp chili powder
1 salt and pepper to taste
Directions
Preheat oven to 350 F. rinse chicken pieces and pat dry. Combine
flour and 2 teaspoons salt. Coat chicken with seasoned flour. Heat
oil in large skillet over meduim-high heat. Brown pieces on all sides
in hot oil, drain on paper towels. Place chicken in 3 quart
casserole. Combine onion, celery, green pepper, ketchup, coca cola,
worchestershire sauce, hickory salt, chili powder and salt and
pepper. Mix well. Spoon sauce over chicken to cover all pieces. Cover
and bake about 1 1/4 hours, or until chicken is fork tender.

The History of Recipes
It is quite feasible to follow the history of written cooking instructions far back into the distant past, in truth as far back as the Egypt of the Pharoahs, and quite possibly further than that. However, mostly, these ancient recipes were just basic pictorial recipes for food preparation.
Interestingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, is a collection of ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Closer to modern times, there were two books published in the fourteenth century ; a recipe book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Amusingly, these have no connection with the indian curry that is familiar to us all today, but instead descriptions of the types of meals served to the rich and powerful of those days. During the succeeding few centuries, the upper classes tried to offer the most extravagent banquests, and because of this the best chefs and their recipe collections were highly sought after. Even so, it wasn`t until the 19th century that fine cooking and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collecting, verifying, and publishing popular recipes of the day. By the time we get to the twentieth century, cookery books are starting to become popular as a result of higher levels of literacy, people having increased free time and being a little richer. Like it or not, the introduction of TV gave us celebrity TV chefs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes such as those found on the site you are now reading. |
