The History of Recipes
It is actually possible to trace the history of recipes back into the distant past, certainly as far as the Egyptians, and maybe further still. However, in the main part, these early records were just basic hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe found, according to Professor Solomon Katz, are some ancient tablets in Sumerian which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful. Later on, in Roman times around 25BC a man called Apicius compiled some documents which described recipes prepared by the Romans. He recounts how the roman meals were separated into hors d`oeuvres, main meal and dessert, a very modern way of dining. This early Roman chef describes how the cooks of his times used many different aromatic flavors, including many that are still in use today such as basil, mint and asafoetida. For the next few years, the wealthy families of Europe tried to lay on the most exotic meals, and as a result cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the 19th century that fine cookery and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to assembling, trying out, and recording recipes for their fellow cooks to enjoy. By the advent of the twentieth century, recipe books were increasing in popularity mostly as a result of increased literacy, people having more free time and being a little richer. |
