The History of Recipes
We can read the history of written recipes far back into the far past, in truth as far into history as early Egypt, and maybe further still. However, sadly, these old recipes were just simple hieroglyphic recipes for food preparation.
In fact, the most ancient recipe discovered, according to historians are a few clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Progressing into Roman times around 25BC a roman called Apicius created a few scripts which described recipes cooked by wealthy roman citizens. In his works, Apicius describes how the meals were divided into starters, main course and desserts, something that is very familiar to us today. Additionally, he informs us how the chefs of Roman times used many spices, including a few you will know for example basil, mint and dill. Later on in the 1400s, people returning from the crusades brought us many new foods and herbs from the holy lands, including coriander, parsley, basil and rosemary. These new herbs and spices was responsible for a torrent in books on cookery, some of which are kept safe in private cookery archives. For the next few years, the families of Europe tried to offer the most extravagent meals, and consequentially the best cooks and their collection of recipes were much in demand. Nevertheless, it was during the nineteenth century that cookery and recipe publications became popular. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated their lives to collating, testing, and writing down the recipes of their peers. The introduction of the TV gave us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing everybody to search through thousands of recipes like the ones you can find on this web site. |
