The History of Recipes
It is quite possible to track the history of written cooking instructions back into the distant past, in fact as far back as the Egypt of the Pharoahs, and maybe even further. Having said that, sadly, these ancient cookbooks were just basic pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the most ancient recipe in existence, according to experts in ancient history are a few stone tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful. Progressing into The time of the romans around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes cooked by his fellow Romans. In his publication, he recounts how the roman meals were divided into hors d`oeuvres, entrees and afters, something we still use today. Aspicius also tells us how the chefs of Roman times were skilled in the use of many spices and herbs, including a few you will know for example bay, fennel and asafoetida. In the fifteenth century, knights returning from the crusades brought back many foods, spices and herbs from the holy land, such as rosemary and coriander. These new spices and herbs caused an increase in recipe publications, some of which are now in private collections. By the arrival of the 20th century, cooking publications were in great demand, due to better eduction, more free time and being a little richer. The introduction of television brings us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting us all to access massive numbers of recipes just like those on sites such as this. |
