The History of Recipes
Recipes as an idea can be observed way back into antiquity, at least as far back as early Egypt, and potentially, even further back. However, sadly, these early records were just very simple hieroglyphic instructions for meal preparation.
Interestingly, the oldest recipe discovered so far, according to academics is a series of tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel exhilarated and blissful. During Roman times around 25BC a roman called Apicius created a number of documents detailing recipes enjoyed by wealthy roman citizens. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. Additionally, he tells us how the ancient Romans were skilled in the use of many different spices and herbs, including some familiar names such as basil, fennel and parsley. In the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from Arab cuisine, including spices like coriander, parsley, basil and rosemary. These new foods and tastes prompted an outbreak in manuscripts on food, many of which are now in private cookery archives. During the succeeding few hundred years, the families of Europe competed to serve the best banquets, and because of this the best chefs and their collection of recipes were at a premium. However, it wasn`t until the 1800s that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collating, testing, and writing down the recipes that were being prepared for the better households. By the arrival of the 1900s, cookbooks were highly popular due to higher levels of literacy, people having increased leisure time and having more disposable income. Like it or not, the introduction of television gave us TV cooks and the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like those on this recipe site. |
