The History of Recipes
Written cooking instructions as a concept can be tracked far back into history, certainly as far back into recorded history as the ancient Egyptians, and potentially, even further back. Having said that, in the main part, these old records were just very simple hieroglyphic recipes for meal preparation.
Later on, in The time of the romans 25BC a roman called Apicius wrote a few documents detailing recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvres, entrees and desserts, a style of dining still practiced today. Aspicius also describes how the ancient cooks used many herbs, including a few you will know such as basil, mint and asafoetida. Over the succeeding few centuries, the powerful and wealthy competed to serve the most exotic meals, and because of this the best chefs and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the 1800s that fine cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to collecting, verifying, and publishing recipes for their fellow cooks to enjoy. When we get to the 20th century, cook books were highly popular mostly due to higher levels of literacy, people having increased leisure time and having more money to spend. |
