The History of Recipes
We can track the history of written recipes way back into the distant past, in fact as far back into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, generally, these ancient cookbooks were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.
Progressing into Roman times around 25BC a man called Apicius assembled a collection of scripts showing how to cook the recipes enjoyed by wealthy roman citizens. In his publication, Apicius recounts how the meals were split into appetizers, main course and desserts, a very modern way of dining. He also describes how the chefs of Roman times used a good variety of aromatic flavours, including a few that are still present in modern kitchens such as thyme, rue and parsley. Later on in the 1400s, the Crusaders brought back a variety of foods and spices from the East, including spices such as parsley, basil and rosemary. These new spices and herbs led to a torrent in books on cookery, most of which are kept safe in private collections. The introduction of the TV brought us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, allowing everyone to search through thousands of recipes such as those found on sites such as the one you are reading now. |
