Ingredients
1 green pepper, diced
4 tomatoes, diced
1 onion, diced
3 garlic cloves, minced
3 cup water
1/4 cup wine
3 tsp lemon juice
1 scallion, diced fine
Directions
Puree all ingredients, except scallion, in blender. Add a little more
water if too spicy. Strain, discarding any vegetable pieces that did
not puree fully. Chill overnight. Serve in chilled glasses or bowls
with diced scallion floating on top.
Serves 4.

The History of Recipes
Recipes as an idea can be observed back into the far past, in truth as far back into recorded history as the ancient Egyptians, and maybe even further. Having said that, in the main part, these old records were just basic pictorial recipes for preparing meals.
In an interesting twist, the most ancient recipe found, according to historians are a few tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel blissful. As we move into The time of the roman empire around 25BC a man called Apicius created a few documents which described recipes prepared by his fellow Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, a very modern way of dining. This early Roman chef informs us how the chefs of Roman times used many spices and herbs, including a few that are still present in modern kitchens such as basil, fennel and asafoetida. In the 15th century, knights returning from the crusades brought us many new spices and herbs from the East, including spices such as coriander, parsley, and rosemary. The introduction of these new foods and spices prompted an outbreak in manuscripts on cookery, the majority of which are now in private collections. Over the next few hundred years, the rich families of Wesstern Europe tried to serve the most exotic banquets, and as a result chefs and their recipes were much in demand. Notwithstanding that, it wasn`t until the 1800s that cooking and cookery books became really popular. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and recording recipes for their fellow cooks to enjoy. The arrival of TV brings us celebrity chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes like the ones you can find on this site. |
