Ingredients
1 medium onion
1 lb (whole) chicken beast
6 celery leaves
4 tbsp chinese lemon sauce
1 1/2 tbsp dark soy sauce
1 lettuce leaves
4 tbsp cilantro leaves and stem,
1 finely chopped
1 lemon's juice
Directions
In a saucepan, put the onion, chicken breast, and celery leaves with
just enough water to cover. Bring to a slow boil; cover and simmer
over medium heat for 10 minutes. Remove from the heat and allow the
chicken to cool in the liquid. When it is cool, skin and boned the
chicken and slice it. Marinate the chicken slices and a mixture of
lemon sauce and soy sauce for 45 minutes. On a serving dish, arrange
the chicken slices on a bed of lettuce leaves; sprinkle with the
chopped cilantro. Sprinkle the lemon juice over the chicken slices.
Your guests can put some of the sliced chicken in the middle of a
lettuce leaf and roll it up like an egg roll before eating. Makes 8
to
10 appetizer servings.

The History of Recipes
It is actually possible to track the history of recipes back into the far past, at least as far as the Egypt of the Pharoahs, and possibly even further. Interesting though that is, these, old records were just basic hieroglyphic or cunieform recipes for food preparation.
As we move into Roman times 25BC a man called Apicius created a few documents describing recipes enjoyed by the Romans. In his works, he describes how the roman meals were separated into hors d`oeuvre, entrees and dessert, something we still use today. Aspicius recounts how the cooks of Roman times were skilled in the use of a good variety of herbs and spices, including many that are still in use today such as thyme, fennel and parsley. During the following few centuries, the rich families of Wesstern Europe competed with each other to serve the most extravagent banquests, and because of this cooks and their recipe collections were highly sought after. However, it wasn`t until the 1800s that haute cuisine and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, spent years to collecting, verifying, and recording popular recipes of the day. The revolution that is television brings us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to access thousands of recipes such as those found on our site. |
