The History of Recipes
Recipes as a concept can be traced way back into ancient history, in truth as far into history as the early Egyptians, and possibly even further. Having said that, in the main part, these early recipes were just very simple pictorial instructions for preparing food.
In fact, the most ancient recipe discovered, according to academics are some ancient tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Progressing into Roman times around 25BC a roman called Apicius assembled a number of documents which described recipes enjoyed by the Romans. In his works, he recounts how the meals were split into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. He also describes how the Roman chefs made use of many spices and herbs, including a few that will be familiar to modern chefs for example bay, rue and asafoetida. Later on in the 1400s, knights returning from the crusades brought back many new foods and spices from the holy land, including spices such as parsley, basil and rosemary. The introduction of these new culinary ideas caused an outbreak in books on cookery, some of which still exist in private libraries. The introduction of the TV brings us celebrity chefs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like the ones you can find on this site. |
