The History of Recipes
Written cooking instructions as an idea can be found way back into distant history, at least as far as the Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these old recipes were just very basic hieroglyphic instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to historians are some ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated. Later on, in The time of the roman empire 25BC a man called Apicius compiled a collection of scripts which described recipes enjoyed by wealthy roman citizens. He recounts how the meals were split into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he informs us how the cooks of Roman times were skilled in the use of a wide range of spices and herbs, including some that we all recognise like thyme, rue and parsley. Later, there are a couple of interesting cookery books dating from the 1300s : one book titled `Forme of Cury`, and another called `Curye on Inglish`. Although the titles sound familiar, these are nothing to do with the indian food that is served today, but rather recipes for the types of food prepared for the rich and powerful of those days. Later, in the fifteenth century, the Crusaders brought back many new foods, spices and herbs from Arab cuisine, including spices such as basil and rosemary. The introduction of these new herbs and spices prompted an outbreak in recipe publications, the majority of which are now in private collections. By the time we get to the 1900s, cooking books were increasing in popularity due to higher levels of literacy, increased leisure time and having more money. |
