The History of Recipes
Historians have traced the existence of recipes back into antiquity, certainly as far back as early Egypt, and possibly even further than that. In practice though, sadly, these early records were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
Later on, in Roman times 25BC a roman called Apicius compiled a few documents which described recipes enjoyed by the Romans. He recounts how the roman meals were separated into hors d`oeuvres, entrees and desserts, something that is very familiar to us today. Aspicius informs us how the ancient Romans were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern cooks for example bay, mint and dill. During the succeeding few hundred years, the rich and powerful families of Europe tried to serve up the most extravagent meals, and as a consequence, chefs and their recipe collections increased in prestige. Notwithstanding that, it wasn`t until the 1800s the formal cooking and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collecting, testing, and publishing the recipes of their peers. Like it or not, the introduction of television brings us celebrity chefs and the demand for the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes such as those found on this recipe site. |
