The History of Recipes
We are able to trace the history of meal recipes way back into antiquity, certainly as far back into recorded history as ancient Egypt, and maybe even further. However, mostly, these old recipes were just primitive pictorial recipes for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius created a few documents describing recipes enjoyed by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and dessert, something that is very familiar to us today. He also recounts how the early Romans made use of a good variety of spices and herbs, including many that are still in use today such as basil, mint and asafoetida. In the 15th century, people returning from the crusades brought us many foods, spices and herbs from Arab cooking, including spices such as parsley, basil and rosemary. These new herbs and spices caused an eruption in recipe manuscripts, some of which still exist in academic collections. When we get to the 1900s, cookery books are in high demand, due to more people being able to read, leisure time and having more money to spend. |
