The History of Recipes
Written cooking instructions as an idea can be traced back into antiquity, in truth as far as the ancient Egyptians, and possibly even further than that. Interesting though that is, these, old cook books were just very simple hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe discovered, according to experts is a series of tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel blissful and exhilarated. Moving our culinary historical trip onwards, there are two interesting cookery books which date from the 14th Century : a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. Despite their titles, they are nothing to do with the curry that is popular today, but rather accounts of the types of food prepared for the rich and powerful of the time. In the 15th century, the Crusaders brought back many new spices and herbs from the holy land, such as coriander, parsley, basil and rosemary. The introduction of these new culinary ideas led to an outbreak in publications on food, many of which are now in private cookery archives. Over the next few hundred years, the powerful families of Europe tried to lay on the most exotic banquets, and consequentially cooks and their collection of recipes became highly prized. However, it was during the 1800s that formal cookery and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and writing down recipes of the day. When we get to the 1900s, cooking books were increasing in popularity mostly due to better eduction, people having more free time and disposable income. The arrival of TV brought us celebrity chefs and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to search through massive numbers of recipes like the ones you can find on this web site. |
