The History of Recipes
Experts have proved the existance of recipes back into ancient history, in truth as far into history as early Egypt, and possibly even further than that. However, generally, these ancient cookbooks were just primitive pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts in ancient history is a collection of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. During the time of the Roman Empire a man called Apicius created some scripts which described recipes cooked by wealthy Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, main course and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the ancient chefs were skilled in the use of a wide range of spices, including some familiar names such as bay, fennel and parsley. As our culinary historical trip moves on a few more years we have two interesting recipe books which were published in the 14th Century - a book entitled `Forme of Cury`, and another called `Curye on Inglish`. Surprisingly, these are not about the spicy food that is served today, but rather accounts of the types of food on the tables of the rich people of the time. In the fifteenth century, knights returning from the crusades brought back many new foods and herbs from the East, such as coriander, parsley, and rosemary. These new foods and spices prompted a torrent in manuscripts on cookery, the majority of which are now in private cookery archives. Like it or not, the introduction of television brings us celebrity TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this recipe site. |
