The History of Recipes
Written cooking instructions as a concept can be traced far back into antiquity, certainly as far into history as ancient Egypt, and possibly even further than that. However, generally, these old records were just very simple pictorial recipes for preparing meals.
In fact, the oldest recipe found, according to food historians are a few tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. Progressing into The time of the roman empire 25BC a roman called Apicius compiled a collection of documents describing recipes prepared by the Romans. He tells us how the meals of wealthy Romans were divided into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also describes how the cooks of his times made use of a wide range of spices and herbs, including a few that are still present in modern kitchens such as thyme, rue and dill. Later on, there were a couple of interesting books which appeared in the fourteenth century - a book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these two books have no connection with the indian curry that is served today, but instead accounts of the types of food served to the rich people of that time. Later on in the 1400s, knights returning from the crusades brought back many foods and herbs from the Middle-East, including spices like coriander, parsley, and rosemary. These new culinary innovations led to an outbreak in books on cookery, some of which are kept safe in private cookery archives. By the time we get to the 20th century, cookery publications were in great demand, mostly as a result of increased literacy, people having increased free time and having more money to spend. The introduction of the TV brings us TV cookery programs and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, allowing everyone to search through massive numbers of recipes just like those on this recipe site. |
