The History of Recipes
Transcribed cooking instructions as a concept can be tracked far back into distant history, certainly as far back into recorded history as the Egyptians, and potentially, even further back. Interesting though that is, in the main part, these ancient records were just basic pictorial instructions for preparing meals.
Later on, in The time of the romans 25BC a roman called Apicius created some scripts detailing recipes enjoyed by wealthy Romans. In his scrolls, he recounts how the meals were divided into appetizers, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the Roman chefs used many herbs, including a few that will be familiar to modern cooks for example bay, rue and asafoetida. Later on, in the 15th century, people returning from the crusades brought back a variety of foods, spices and herbs from the holy lands, including spices like coriander, basil and rosemary. These new foods and tastes created an outbreak in books on cookery, some of which are kept safe in private cookery archives. When we get to the 20th century, cookbooks are highly popular due to better eduction, people having increased leisure time and being a little richer. |
